Vietnamese Pickles
Overview
Đồ Chua (literally translates to sour stuff), are carrots and daikon soaked in a vinegar brine solution. The pickles are used for rice noodle and spring roll dishes.
Ingredients
- 2 small daikons
- 2 carrots
- 1 cup of sugar
- 1 cup of vinegar
- 1/8 cup of salt
- 3 cups of water
Directions
- Peel daikon and carrots
- Cut daikon and carrots diagonally into small slice
- Cut the slices into small strips
- Bring the water up to a boil
- Put the sugar, vinegar, and salt in a bowl and pour over hot water
- Let the mixture cool then add the strips of daikon and carrots
- Let soak for at least 20 minutes
- You can store it in the fridge in a jar for a couple weeks.
Ratio
1 part sugar : 1 part vinegar : 3 parts water: .10 parts salt
