Overview

Ingredients

  • 1 Tbsp. sesame seeds
  • 2 cloves garlic
  • ½” ginger
  • Scallion (white part)
  • 2 tsp. sesame oil
  • 2 tsp. chili bean paste
  • 2 tsp. miso
  • 2 tsp. soy sauce
  • 1 cup unsweetened soy milk
  • ½ cup dashi
  • ½ tsp. Kosher salt
  • Dash of white pepper
  • 8 oz unsweetened soy milk

Stock

  • Stir fry the garlic, ginger, until soft
  • Continue stir frying the chili bean paste, miso
  • Add the soy milk, soy sauce, dashi (soak kelp in hot water and pour the stock in), and salt
  • Pour in the unsweetened soy milk, and only bring up to a medium boil right before serving. Don’t simmer the broth too long or else the soy milk will coagulate.

  • Cook all vegetables separately and not in the broth
