Vegan Ramen

Ingredients
- 1 Tbsp. sesame seeds
- 2 cloves garlic
- ½” ginger
- Scallion (white part)
- 2 tsp. sesame oil
- 2 tsp. chili bean paste
- 2 tsp. miso
- 2 tsp. soy sauce
- 1 cup unsweetened soy milk
- ½ cup dashi
- ½ tsp. Kosher salt
- Dash of white pepper
- 8 oz unsweetened soy milk
Stock
- Stir fry the garlic, ginger, until soft
- Continue stir frying the chili bean paste, miso
- Add the soy milk, soy sauce, dashi (soak kelp in hot water and pour the stock in), and salt
- Pour in the unsweetened soy milk, and only bring up to a medium boil right before serving. Don’t simmer the broth too long or else the soy milk will coagulate.

- Cook all vegetables separately and not in the broth
