Overview

  • Steam eggplant for 30 minutes, rotate half way in
  • Let cool
  • If eggplant skin is bitter peel off
  • Pull into 5 cm strips
  • Marinate with ratio of 1 soy sauce : .10 mirin : .05 sesame oil : .10 mirin : .10 maple syrup : .10 chopped fresh ginger : 1 clove crushed
  • Season with black sesame and white sesame and green onions
  • Let marination happen for at least 10 minutes
