steamed eggplant
Overview
- Steam eggplant for 30 minutes, rotate half way in
- Let cool
- If eggplant skin is bitter peel off
- Pull into 5 cm strips
- Marinate with ratio of 1 soy sauce : .10 mirin : .05 sesame oil : .10 mirin : .10 maple syrup : .10 chopped fresh ginger : 1 clove crushed
- Season with black sesame and white sesame and green onions
- Let marination happen for at least 10 minutes
