Miso Claypot Chicken
Overview
This recipe is adapted from Lucky Peach. It simplifies several of the steps involved.
Ingredients
- 4 chicken thighs with bone in and skin
- 2 cups of brown rice
- 3 chinese eggplants
- 4 shittake mushrooms
- 1-2 tablespoons miso
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- Rice cooker
- Splash mirin (optional)
- 2 whole green onion cut in half
Directions
- Dissolve miso in half a cup of hot water, soy sauce, sugar, and splash of mirin
- Put the chicken thighs and toss to quickly marinate
- Dice the eggplant
- Slice the shittake mushrooms
- Put brown rice in rice cooker and enough water to make 2 cups
- Put the chicken in the rice cooker, followed by eggplant, and shittake, and green onion
- Press start on rice cooker
