Ingredients

  • Eggplant
  • Lemon Juice
  • Peanut Butter
  • Salt

Directions

  • Turn on your oven broiler
  • Put an eggplant on a sheet with foil and broil about 6 inches away for 10 minutes
  • Broil until the eggplant is thoroughly charred
  • Put eggplant on a strainer and poke to drain some of the liquid - if the eggplant is old discard the juices, if fresh keep it
  • Blend with peanut butter, salt, and lemon juice.
